As of this writing (who knows what future regulations might bring) “London Dry” is a style of Gin that has a few requirements – 96% ABV agriculturally derived base spirit, all natural ingredients, 37.5% ABV minimum, .01 g/l of sugar maximum, and juniper dominance. Fortunately this leaves room for local botanical expression. This particular product presented itself on a recent trip to Sicily, where Giasira Winery had it on offer. What makes it unique is the inclusion of carob in the list of botanicals. A mild cocoa note is present just under the vibrant juniper in both the aroma and flavor profiles, which makes for some interesting cocktail possibilites – try it in an espresso martini to add a piney flair for the holidays.
