Out of Oaxaca comes what is known as an ensemble mezcal, meaning mezcals are pulled from two different sources, then distilled together, in essence, creating a blend. Fruit is then added for a third distillation. The nose offers herbal and light smoky notes, and delicate citrus fruit. There is the definite taste of agave flanked by a muted smokiness, some herbaceous qualities of flower, earth and wind flowers, and a hint of spiciness and tanginess that fills the entire palate. It comes across much clearer than a lot of mezcals, many of which taste over refined. This is clean, bold, aggressive and a good mixer, but also works well as a straight sipper.
