Bushmills Distillery Exclusive Single Malt Irish Whiskey ($80)

This single malt starts off aging in roughly 60% bourbon barrels and 40% Sherry casks, then is transferred to be aged for just over a year in acacia wood. Acacia imparts fewer tannins than other woods. Used most often for California Sauvignon Blancs, it is rarely used in spirits, and here imparts a characteristic woody, spicy ingredient. For the average drinker, this might seem more of a novelty (and frankly it is), but for more seasoned drinkers its woody/spiciness is noticeable. The nose puts forth spice, sugared almond, and browned butter. On the palate it starts with sugared almond, resin, manuka honey and light floral notes. Dried berries, vanilla, graham cracker and light tobacco round out the offerings. Interestingly, it starts off almost heavy, then softens a bit in the mid-palate and then totally relaxes on the finish. Yes, it’s a touch out of balance, relying on an aggressive opening, but an ice cube, or a few drops of water smooths it out. 93
