Willett Kentucky Straight Bourbon Whiskey ($110)

What makes Willett so good from the outset is that it is unbelievably balanced. “Balance” is the term tossed around by spirits writers, though it’s not clearly defined. For me, balance is about the judicious use of grain, spice, wood and fruit in the distillation and aging process to make a comprehensive drink that is not only thoroughly enjoyable, but also lacks any notable issues, including burn in the mid and back palate. Apricot, crème brûlée, browned, butter, caramel, honeysuckle, slight resin, honeyed almond, citrus zest are all noticeable and welcomed in this very comprehensive bourbon. It also lacks the inherent sweetness of most bourbons, considering the mash bill lists 65% corn. Willett bourbon succeeds precisely because it does not overextend itself with an aggressive, high alcohol content, nor does it seek to promote one element over the other, it is merely a balance of four elements to create a lovely bourbon that can withstand the test of time. 96
