Lighter in style, this Scotch offers fresh citrus, stone fruit and resin, and the finish adds a bit of honey and plum. There’s a subtle elegance to this, making it the kind of Scotch newbies could enjoy. There’s solid quality here, and considering the price, this over delivers. The recipe starts with 100% malted barley, dried in a peat-fired kiln. The barley is then cooked and fermented with yeast to create a distiller’s beer. From there, the beer is distilled twice in pot stills before being transferred to previously used American bourbon barrels for aging of about 12 years. Once the whisky has finished aging, it is transferred to previously used Sherry casks for six to nine months for finishing. The light peat from the kiln is very mild so if you don’t like peat, this will not cause any consternation. 92
