Liqueur is an interesting category – in some ways, it’s a catch-all space for fortified beverages of just about any type, at proof levels that can vary from fifteen to over forty percent alcohol. I’ve done some limoncello making at home, and it’s great fun to play around with the ABV level versus the concentration of fruit and sugar to find a balanced pleasure point. This Honey Bourbon is a bit different – it seems to start with a fine bourbon that’s dosed with honey, and it hits a nice mark at 35% ABV, letting the honey speak clearly without smothering the delightful bourbon characteristics. It’s something to reach for when you’d like a mellower, less edgy nightcap than a full throttle whiskey. 90
