Amaro (meaning “bitter” in Italian) has a long history in Europe – a bittersweet digestive originally meant to be drunk after dinner. First created in 1860, Montenegro is a blend of bitter herbs, herbaceous plants, fruit, alcohol and water. Montenegro has been producing their amaro for 140 years, and it’s a staple of nearly every bar. Though it has a sweeter profile than many amari, there is the normal star anise, resin, butterscotch, burned sandalwood, tanned leather as well as a noticeable bitterness, tempered by the sweetness, but also a light citrus note closer to the finish. Montenegro is meant to be a mixer and indeed it works well as a bitter component for cocktails. For sipping neat, unless you like the dominant sweetness, use a quality ice cube, which will mute the sweetness. 91
