Though the Absinthe craze has died back a bit after a big splash in the USA when it was made legal again, it’s still quite desirable as a cocktail ingredient in addition to its curiousity appeal. This version is quite affordable as examples go, and it does its job admirably, with bold anise aromas that will fill a large space at the slightest pour. Tinted proper green, it continues the black licorice festivities on the palate with bright warming burn when undiluted. A perfect rinse for your next Sazerac – or louche it for a pleasant digestif. I realize that the flavors aren’t for everyone, but there’s real nuance here that, handled properly will please just about anyone.
