This single barrel, distilled in Chicago, offers a surprising mash bill: 51% corn and 49% millet. The corn isn’t unusual — all bourbon has to be made from 51% corn by law — so the millet is the wild card here. This is less sweet than most bourbons on the market and offers more resin, butterscotch and cinnamon notes, and a sense of maturity rather than overt sweetness. There are also lighter notes of apricot and peach zest. The millet provides soft hay and summer grass elements. Aged for two years before release, it’s fairly light on the entry through the mid-palate and into the finish. Overall, it is a very pleasant bourbon, but lacks much definitive character in spite of the millet, which actually softens the corn, and therefore not much really stands out as unique or different. 91
