When Casa Noble launched in 1997, it was with the goal of making great Tequila. That probably sounds obvious, however there is one particular element that separates good spirits from great spirits: water. The water source used in making any spirit is crucial. And Casa Noble has the distinction of pure fresh water coming from a local mountain (a stream of this water actually runs through the property), which is used for all their Tequila expressions. The nose immediately telegraphs spicy, earthy agave with its inherent light sweetness, and subtle caramel from the wood aging. The first sip follows with a creamy and soft viscosity, lovely agave notes (which are more pronounced on the finish) as well as light butterscotch and a spiciness that runs through the palate. This is a seamlessly blended Reposado, one where you can actually taste the agave, and one where the barrel flavor supports, not overwhelms the agave. Ultimately, this is a clean, pure version of what a proper Reposado should be. 95
