The nose on Pipe Dream 101 is classic Bourbon – vanilla, butterscotch, and light char. It packs a punch right out of the gate – as it should given its 101 proof status. But what first seems like it might be sweet and typical changes direction on the palate. There is the obvious caramel, vanilla, and butterscotch, but there are also notes of light resin, apricot, cinnamon, orange zest, apple rind and subtle leather. This is a very balanced bourbon for a high-proof. The four-grain mash bill consists of 73% corn, 19% rye, 5% malted barley, and 3% wheat, yet in spite of the sizable amount of corn, it’s not overtly sweet. This is a blend, namely of 5 to 15 year old bourbons, though they claim an older aging statement of the base bourbon. I suspect, however, the aging to closer to five years given its flavor profile. Nonetheless, this drinks very well and from the first sip to the finish. A very enjoyable bourbon, and well worth the price. 94
