Liberty & Plenty Bronze Bull Bourbon Honey & Fig ($50)

It’s obvious that the sweetness in this bourbon is slightly accelerated – and if you didn’t know this was finished in honey coated barrels, you would still know that something different has transpired other than the usual cask finish. All in all this is a nice departure from more traditional bourbon whiskies. Finishing aging in various barrels (old Pinot Noir, Sauternes, Cabernet, etc) is nothing new — everyone wants to amp up their bourbon. Some work, others don’t. Finished in barrels washed in fig, wildflower honey and buckwheat honey, the base spirit uses seven-year, five-year, and two-year old bourbon from both North Carolina and Indiana. Yet it all works. The fig notes too are somewhat evident, the fruitiness being unlike other bourbons. Additionally, there are more traditional notes of butterscotch, apricot and caramel, light resin and lemon-lime zest. Having the distinction of being different is good, but Liberty & Plenty also delivers with a balanced unique approach to a traditional category, and they succeed nicely.
