High West Cask Strength Whiskey ($80)

This is a blending of various straight whiskies bottled at cask strength produced from MGP and Heaven Hill and finished at High West. The nose is browned butter, butterscotch, vanilla and cinnamon. It’s clear from the get-go that this will need to be cut, and even the distiller recommends leaving this open for at least 20 minutes before drinking. It presents an initial bracing heat, with notes of resin, mandarin orange, candied lemon, black walnut, butterscotch, sandalwood, vanilla, and almond nougat. For a cask strength, all the flavors are evident, yet surprisingly for a cask strength, it’s a little mild overall with the flavor profile. The mash bill is predominately corn (around 70% or greater, though High West doesn’t disclose exact specifics) with rye, malted barley and an age statement of between four to nine years. If you have the time to sit with this, the diversity of flavors will become evident, and ultimately High West does a great job on this one. 93
