
Here’s a new product in the Uncle Nearest line, and it’s a fine addition to the stable. Much like as happens with wine, the more toasted a barrel is, the more oak tones are imparted to the liquid. Aromatically, the wood tones are more forward than their most recent single barrel offering that I’ve tasted, with some charred wood tones riding atop the caramel, apple and cherry tones that you’d expect. Think more burnt sugar than merely caramelized and you’ll get the picture. The label recommends pairing with chocolate, and I’d qualify that by saying a high cacao content will make this pop.
