Madre Mezcal is a blended mezcal, meaning it is produced by multiple mezcaleros and their families in different parts of Oaxaca, using a traditional Zapotec recipe. The agaves are roasted in earthen pits, fermented with local well-water and wild yeast, and distilled in an aged copper still. The agave are crushed into a fermentable mash using the age-old tahona grinding-stone method. Though virtually all mezcals have a smoky quality, differences abound. For Madre, the smokiness is mild and not overpowering, which still allows the agave notes to be present. This offers a sweet fragrance, and herbal notes of sage, earth, and minerals with a lingering floral finish. It is a fine entry into the alluring world of mezcal.
