
This bourbon begins its journey, not as an aggressive no-holds-barred bourbon, but on the softer, quieter side. With a mash bill of 70% corn, 15% barley, and 13% rye, you might expect to find a potent level of sweetness, but It’s actually rather muted. There are identifiable caramel, butterscotch, candied apricot, and resin notes, but it also offers light black cherry, orange zest and browned butter. The Cabernet Sauvignon barrels produce a noticeable effect – a mild grape sweetness as well as less aggressive notes from the barrel, this in spite of starting off in new charred white oak. Therefore the tannic structure is softer, and there is a bit more maturity. Whether you think Kentucky bourbon should stay in Kentucky, or once distilled move to California to rest in wine barrels is entirely up to you. However, Amador has melded two distinct styles and the result is a resounding success. This is a balanced bourbon with mature flavors that glides along the palate for an enticing finish. 95
