There’s a lot to geek out on with this beautiful Mezcal, so I’ll toss out some terms that will get you in the mood for researching while sipping: Maguey. Agave Karwinskii. Cuishe. First Run. Joven. If you aren’t in the mood for research, just think “young, very specific plant type”. It’s wild sourced, roasted underground with oak and volcanic stone, then stone milled, native yeast fermented and twice distilled in copper. The result is a sublime Mezcal, one where the smoke character is folded into the rest of the flavors, offsetting the citrus, earth tones and soft spice notes beautifully. It’s clearly made to be a solo sipper for all its complexity, and it’s one that’s priced well below any serious competitors. Brava! 94
