The makers of Blackletter Cabernet Sauvignon bring us this new product, making the link to the wine project by finishing the bourbon with Cabernet barrel staves. This gives a little extra roundness to the mash bill of 75% corn, 21% rye and 4% malted barley, adding a creaminess to both the sweet corn notes of butter pecan and toasted marshmallow and the spicy character of rye. Those elements finish together with fine-tuned integration over pleasant heat with no burn. It’s not what I’d call traditional, but I imagine that traditional was not the intent.
