Made from Ugni Blanc grapes grown in various vineyard sites through out the Cognac region, Phantom goes through pot still distillation and is then aged in young French oak. Citrus and wood notes dominate initially, along with browned butter, Madagascar villa bean, sugared almond and light floral notes. There’s a light spiciness from the mid to back palate. This is elegant, smooth, very comprehensive, and hits all the right parts of the palate. It’s a bit earthier than many Cognacs but offers a lingering finish that exudes wood, spice and earth. It’s a little rustic around the edges, but that adds to the allure.
