Though technically a London Dry style, Dingle veers off the path with a heavier dose of botanicals. There’s a delightful viscosity to this, and it immediately offers a minty, juniper, eucalyptus quality. They don’t divulge their recipe but do state the use of rowan berry from mountain ash trees, fuchsia, bog myrtle, hawthorn and heather. “It’s a formula unknown elsewhere and is calculated, amongst other things, to create the sense of place and provenance,” they state. The spirit is collected at 70% abv and then cut to 42.5% abv using water drawn from their own well located 240 feet below the distillery. The result is a unique gin, offering more diversity than London Dry, but still offering a balance of flavor, texture and drinkability.
