This is likely Freeland’s best-known product, and that is certainly for good reason. Wildly aromatic, it captures the pacific northwest beautifully, with fresh juniper and spruce tip aromas offset by notes of cucumber and citrus zest. All this comes through boldly on the palate, with bright spirit heat (something lacking in many gins these days) pushing the flavors which get a little pepper and anise push in the finish. It’s a mind bender neat, and it suggests cocktails that boost rather than cover its character. Try it with Fever Tree Light Tonic for a dry style G&T, or go full City of the Roses with a little Portland Soda Works Rose Cordial instead of vermouth in a martini. Try 2.5 oz. gin and a quarter oz. of the cordial for openers and adjust the cordial to taste. Made by Master Distiller Molly Troupe.
