Begun in the mid-1700s, Hine Cognac combines “around twenty” different eaux-du-vie from various sources in and around Cognac, creating a final blend to age at their Maison. That said, they don’t release an exact aging statement – they state at least four years – therefore this VSOP is a lighter style. It offers an initial light and buoyant nose, lacking the overt caramel notes in favor of apricot, apple, and sugared almond. These flavors all translate to the palate as well, and there are added bursts of resin, wildflowers, candied ginger, light sweet oak, vanilla notes and orange zest. Given its shorter aging it offers brighter notes and fewer darker tones. It’s ultimately a very well balanced Cognac, an easy sipper and one that won’t overwhelm the palate. Though there are Cognacs that have been aged much longer and showcase wood and char influences, Hine has chosen this VSOP to reflect the bright, clean and fruity nature of Cognac, and does so quite admirably. 92
