Named for a grove at Calaveras Big Trees State Park in the Sierra foothills, this tasty gin delivers the fresh conifer character that we all expect from a gin, but it does far more than that. What stands out here is the balance between the juniper and the other elements, which delivers a freshness that’s not unlike a walk through the ancient forest on a crisp winter morning – the sort of stroll that heightens your senses and makes you glad to be alive. The grape base is a big asset here, keeping everything creamy without becoming oily and letting the botanicals shine. I’d advise a light tonic in a G&T, or half your usual amount of vermouth in a martini – you don’t want to cover up anything here. 95
