As tequila and mezcal become increasingly popular, there is huge pressure on the agricultural aspect of growing agave to maturity – in other words, they can’t plant the stuff fast enough to meet demand. This makes room for some of the other distillates from different agave types on the shelf, i.e. Sotol, Bacanora and Raicilla on the shelf. This Raicilla is rustic, a touch on the green side, and pleasantly edgy without losing a sense of balance. Be sure to taste it side by side with your favorite blanco to appreciate the differences.
