The name Jack Daniel’s is synonymous with American whiskey. They are the most ubiquitous and widely sold American whiskey in the world. The whiskey mash bill was designed by Jasper “Jack” Newton Daniel himself, and is a blend of 80% corn, 12% malted barley and 8% rye. What’s unique is their charcoal filtering (they call it mellowing) via filtering the whiskey through sugar maple wood that has been burned down to charcoal. They also have their own source of water, located on their property, and a proprietary yeast that has come straight from a starter that Jack himself first used – a concept similar to sourdough bread in that many have starters that go back hundreds of years. Where Jack got his original strain no one knows. Unlike many whiskeys, Jack is not a sweet offering. Yes, there are caramel and butterscotch notes, but that is tempered with resin, apricot, lemon zest, and kefir lime. But Jack has more wood notes to it, noticeable from the sugar maple. The finish is soft cinnamon and clove with a bit of five spice and light citrus notes.
