Killington (located in Vermont) is a new producer to me, and you can bet its one I’ll be looking into further based on the merits of this beautiful Gin. I’d call it classic with a twist – there’s a little spruce tip hint on the nose that is distinct from and serves to accent the expected juniper profile. It also comes through on the palate, where impeccable balance between spirit heat, juniper, lemon/lime and the spruce form a dance that lingers through a finish where a little peppery note joins in. It’s a joy served neat, or try it with a subtle vermouth in a Martine, or some Fever Tree Light tonic for a fabulous G&T. It’s the sort of Gin that’ll have you experimenting with mixers – it’s more than up to the task.
