
Sambuca’s roots can be traced to 1851 in Civitavecchia, a port town 50 miles northeast of Rome, when Luigi Manzi came up with the first commercially sold Sambuca. Yet the most well-known Sambuca brand is Molinari, which started in 1945. A sweet and strong liquor, this anise-flavored white spirit is made from star anise seeds, sugar and various herbs and spices, the recipe of which is not disclosed. The base consists of essential oils extracted through steam distillation of star anise seed. Sambuca is a surprisingly diverse base for a wide variety of cocktails, though coffee-based cocktails are the most prominent. Historically, it’s been served as a digestive with three coffee beans floating on top. Even on its own it is a compelling drink not unlike Greek Uzo, with the licorice notes being at the forefront. The anise is the obvious and governing flavor here, followed by a viscous sweetness, and fennel, aided by a slew of herbs, most of which are not identifiable on their own. As a mixer its sweetness works especially well with the bitterness of coffee and if you’re a fan of sweet licorice, this might be the digestive for you.
