Out of Indiana comes this whiskey, whose focus is on the wood treatment, hence the name. Obvious is the brown sugar, caramel, and butterscotch notes along with citrus zest, resin, Bing cherry, and vanilla bean. As bourbons go, this packs a punch early on with heat on the front palate. There is a slight imbalance here, however, with an aggressive burn. To serve this straight a little water or ice will calm down the aggressiveness. As a mixer, it will hold its own and not be overshadowed by anything else. This whiskey then went through what the owners call a “proprietary finishing process” – where staves of Spanish Sherry oak casks are added to the whiskey and then heated and pressurized to impart the flavor from the staves directly into the bourbon. Prior to that the customary American white oak is used. And though that all sounds good, the result is nothing more than a solid, if average, bourbon that uses two different woods to impart flavor. 90
