This is less sweet than most bourbons, which is a nice change of pace, but it does offer noticeable, resin, caramel, and butterscotch, apricot and citrus zest, browned butter and pepper spice. It has a soft entry with a little bite in the back pallet. There is also an interesting viscosity to this, which belies the potency of the alcohol, making this a more consumable bourbon whether served neat or with ice. The mash bill consists of 74% corn, 20% rye, 4.5% malted barley, and a scant 1.5% wheat. This is a well-produced bourbon that is worth its price point, however it does lack a significant personality, making it more middle of the road, but nonetheless enjoyable. This is a sourced bourbon (purchased from other distilleries), then aged by Redwood Empire for “at least four years,” according to them. For a little more money there are better options in the market, but if price is a concern and you want something that’s crafted fairly well, Pipe Dream isn’t a dream come true, but certainly a pleasant daydream. 91
