Añejo Tequila is aged in wood, and that process adds an amber shade and some vanilla flavor to the finished product. A “Cristalino” goes through a process to remove the color while maintaining that vanilla note. This helps when making fancy cocktails where keeping vibrant colors of the accompanying mixers intact is a priority. This iteration rises above gimmickry and lets you know right away that no mixing will be required. It’s a great solo sip, with rich agave character, pepper, grass, lime and just a hint of vanilla that rounds the edges, but not so much that it loses brightness. Beautifully realized!
