Baijiu is the world’s best-selling spirit, but you likely have little to no experience with it if you live outside of China. Typically distilled from sorghum, it can be quite nondescript in character, but this particular offering kicks things up several notches. Distilled from huskless barley like a Scotch whiskey, this has a depth and complexity uncommon in the category. Its water source is a critical component as you’ll notice both in flavor and in texture here, and it carries aromas and flavors of grass, stony mineral and subtle citrus notes through a very long and inviting finish – as in inviting you to sip again. Absolutely worth seeking out – run before the tariff scene makes it difficult to locate! 96
